Heart Healthy Foods: Mediterranean Salad

Ingredients: 1 cup chopped carrots 1 cup chopped broccoli 1 cup chopped cauliflower 1 cup chopped celery 1/4 cup sliced kalamata olives 2 oz feta cheese 2 tbsp olive oil 1 tbsp balsamic vinegar 1 tsp cumin salt and pepper to taste Combine all vegetables and cheese in a bowl and mix well. Whisk together the olive oil, vinegar, cumin, salt, and pepper in a bowl. Add the olive oil mixture to the vegetable mixture and toss to coat.

  2. I just wanted to let you know that I made this and was delicious! I also adapted the recipe into a curry using curry paste, raisins, and topping with mango chutney.
